Caramelised Pear, Walnut & Blue Rock Open Tart

Description

This open tart is full of classically paired flavours and is heavenly with a glass of Fairview wine.


Ingredients

Tart
50 g butter, melted
3 sheets phyllo pastry
Filling
3 pears, peeled, cored and cut into eighths
30 g brown sugar
40 g butter
black pepper
100 g Fairview Blue Rock
50 g walnuts
¾ C (180 ml) cream
1 egg
salt and freshly ground black pepper


Instructions

Tart

Preheat the oven to 180 ºC.

Melt the butter in a saucepan and brush the sheets of phyllo pastry with the melted butter. Lay them one on top of the other in a shallow baking tray and trim the edges.

Filling

Place the pears, sugar, butter and a good grinding of black pepper into a frying pan and cook until the pears start to caramelise. Allow to cool for a few minutes.

Place the pears in the tart shell. Crumble the Fairview Blue Rock over the pears and sprinkle with the walnuts. Mix the cream and egg together and season with salt and pepper. Pour the cream mixture over the pears and cook for 45-50 minutes until the cream mixture has set. Serve warm with a little fresh watercress.
