Baked Plums with Spiced Ginger Biscuit Crumble

Description

Baked seasonal fruit is a tasty, inexpensive dessert option to end off a dinner party.


Ingredients

46 large juicy, ripe plums, halved and de-pipped
½ C (125 ml) flour
3 Tbsp (45 ml) brown sugar
¼ C (60 ml) oats
50 g butter, chilled and cubed
4 ginger biscuits, finely crushed
¼ C (60 ml) orange liqueur, to serve (optional)
vanilla bean ice cream, to serve


Instructions

Preheat the oven to 180 °C.

Place the halved plums, flat side up, onto a baking tray and set aside.

Place the flour, sugar and oats into a bowl and, using your fingers, rub in the butter until the mixture resembles breadcrumbs.

Top each halved plum with a little of the crumble mixture and sprinkle generously with some crushed ginger biscuits.

Bake in the oven for about 15-20 minutes or until the plums have softened and the crumble is crispy and golden.

Serve warm, with a little orange liqueur drizzled over the plums and a serving of vanilla bean ice cream.
