Baba Ghanoush

Description

Baba Ghanoush will complete any Greek meze platter


Ingredients

2 aubergines (brinjals), washed and kept whole
2 Tbsp (30 ml) olive oil
1 onion, finely chopped
1 clove garlic, crushed
1 red chilli, seeded and finely chopped
handful of parsley, chopped
zest and juice of 1 lemon
2 tsp (10 ml) tahini paste
salt and freshly milled black pepper
 


Instructions

Preheat the oven to 200 °C.

Place the aubergines onto a baking tray and roast for 30 minutes or until soft and the skin is well blistered. Remove from the oven and allow to cool before peeling and discarding the skin. Place the aubergine flesh along with the rest of the ingredients, in a food processor and blend until smooth.

Season with salt and freshly milled pepper and serve with the lamb koftas.
