Sweet and Sour Pork Goujons

Description
These pork goujons with vegetables are simple to make and oh so delicious!
Ingredients
750 g pork goulash
salt to taste
2 Tbsp (30 ml) soy sauce
oil for deep-frying
Batter
1 egg
½ cup (125 ml) self-raising flour
½ cup (125 ml) cornflour
± 1/2 cup (125 ml) water
Veggies/blue_heading]
1 large carrot, cut into julienne or thinly sliced
1 green pepper, cut into julienne strips
1 packet spring onions, sliced on the diagonal
½ head broccoli, cut into florets
1 cup (250 ml) cubed pineapple, fresh or canned (optional)

3–5 Tbsp (45–75 ml) sugar or honey
3 Tbsp (45 ml) vinegar
2 Tbsp (30 ml) soy sauce
150 ml apple or pineapple juice
½ cup (125 ml) water
2 Tbsp (30 ml) cornflour
Instructions
Marinate the pork in salt and soy sauce for 1 hour (or do this in the morning before you go to work). Drain and pat dry.
Mix all the batter ingredients together until smooth.
Dip pork into batter and deep-fry until golden. Drain well on paper towels.
In a pan or wok, stir-fry the carrot, green pepper, spring onions and broccoli.
Mix all sauce ingredients together and pour over vegetables. Add pineapple cubes, if using. Bring to the boil and allow sauce to thicken. Pour over pork and serve with egg noodles or sticky rice.
TIP
Replace pork with chicken, rump steak or firm fish.
