
Marbled Choc Avocado Banana Bread
Banana bread gets a revamp with healthy fats from avocado, making it moist and nutritious. Oh, and did we mention the addition of chocolate too?

Ingredients

Dry Ingredients
2 C (500 ml) cake flour
2 tsp (10 ml) baking powder
1 tsp (5ml) baking soda
1 tsp (5 ml) salt
Wet Ingredients
3 overripe bananas
2 eggs
½ C (125 ml) plain full cream yoghurt
1 tsp (5 ml) vanilla extract
1 tsp (5 ml) cinnamon
Cocoa & Nuts
2 Tbsp (30 ml) cocoa powder
To Serve
Your favourite nut butter
Method
Avo & Banana Bread
Preheat the oven to 180 ºC.
Add the dry ingredients to a mixing bowl and whisk to combine.
Add the wet ingredients to a mixing bowl and use a stick blender to blitz until smooth.
Add the wet ingredients to the dry and fold together. Use a kitchen scale to divide the mixture in half into two separate bowls. Add the cocoa powder to one of the bowls and whisk to combine.
Line a loaf tin with baking paper; place a generous dollop of chocolate batter into the tin on one side, then place a spoon of the regular batter next to it. Repeat the process but alternate the colours to fill the tin. After you’ve got a single layer done, repeat the process to build another layer but on this layer, alternate the colours.
Top with a sprinkling of walnuts and bake in the oven for 55-65 minutes or until a cake skewer comes out clean. Allow to cool completely and then remove from the tin. Slice and serve with butter and lashings of creamy peanut or your favourite nut butter.
