Bircher Muesli with Toasted Almonds, Pistachios and Seasonal Berries

  • 1½ C (375 ml) oats
  • ¼ C (60 ml) raisins
  • 1 C (250 ml) apple juice
  • ¾ C (190 ml) Bulgarian yoghurt
  • 100 g flaked almonds, toasted
  • 50 g shelled pistachio nuts, toasted
  • 1 apple, peeled and grated
  • 250 g fresh berries (strawberries, black berries, blue berries)
  • honey for serving

Place oats and raisins into a bowl and pour over the apple juice. Cover with plastic wrap and leave to soak overnight in the refrigerator.

Just before serving, stir in Bulgarian yoghurt, toasted nuts and grated apple.

Spoon into 4 individual glasses and serve topped with berries and a drizzle of honey.
