Description

A creamy blend of Clover Smooth Strawberry Flavoured Low Fat Yoghurt, peanut butter, and mixed berries, this smoothie is a quick, delicious, and nutritious treat. Top with peanut butter crumble for a little extra indulgence. 


Ingredients

Peanut Butter Crumble 

1 C (250 ml) oats
3 Tbsp (45 ml) brown sugar
¼ C (60 ml) shredded coconut
¼ C (60 ml) desiccated coconut
¼ C (60 ml) unsalted peanuts
3 Tbsp (45 ml) butter, melted
2 Tbsp (30 ml) honey
¼ C (60 ml) smooth peanut butter

Peanut Butter & Berry Chia Smoothie

2 Tbsp (30 ml) chia seeds
½ cup (125 ml) Clover Full Cream Fresh Milk
2 C (500 ml) Clover Smooth Strawberry Flavoured Low Fat Yoghurt
2 frozen bananas
1 C (250 ml) fresh/frozen mixed berries (blackberries, strawberries, raspberries, blueberries)
3 Tbsp (45 ml) smooth peanut butter + extra melted peanut butter, for drizzling (optional)


Instructions

Peanut Butter Crumble

Preheat the oven or air fryer to 180 ºC. If using the oven, prepare a baking sheet with nonstick spray. For the air fryer, use a paper liner to line the basket. Combine all the dry ingredients in a bowl, then mix in the butter, honey, and peanut butter until fully incorporated.

If using the oven, spread the mixture evenly onto the prepared baking sheet and bake for 10 minutes, stirring every 2 minutes to prevent burning on the edges. If using the air fryer, spread the mixture in an even layer in the lined basket and bake for 6-8 minutes, shaking or stirring every 2 minutes for even cooking.

Once baked, remove the crumble from the oven/air fryer, let it cool completely, then gently break it into clusters. Store in an airtight container for up to one week.

Peanut Butter & Berry Smoothie

To bloom the chia seeds, combine them with the milk in a jar with a lid. Shake the jar every 5 minutes until the seeds have expanded and are evenly dispersed. Tip: do this before you start making the crumble, so that it has time to absorb. 

In a blender, combine the Clover Smooth Strawberry Flavoured Low Fat Yoghurt, frozen banana, berries, peanut butter, and soaked chia seeds. Blend until smooth and creamy. Pour into glasses and finish with peanut butter crumble and a drizzle of melted peanut butter on top. Alternatively, serve in breakfast bowls for a filling morning treat.
