Pan Fried Toasted Cheese Sandwich

Description
The taste of a good sourdough is so much better than normal shop bought bread. If you prefer, get wild and mix it up with a combination of different cheeses.
Ingredients
3 (45 ml) Tbsp soft butter (not margarine)
4 slices 1.5-2 cm sliced sourdough, one to two days old
160–200 g grated Healey’s or any other mature cheddar
Instructions
Heat a thick bottomed pan to a medium heat.
Completely butter the sourdough bread on both sides, do not be shy and lay it on. Depending on the size of your pan, either place all 4 slices or just 2 in the pan and gently cook only one side until golden brown, about 2-3 minutes.Place cheese on one/two of slices (depending on how many you have

When both sides are well toasted, remove from the pan and allow to rest a little before slicing to allow for the cheese to melt further. Add a sprinkling a little Maldon salt after toasting and then tuck in.
