Moscow Mule Poptail

Description

This makes the refreshing Mule just that much more thirst quenching.


Ingredients

Ice Lolly

1 x 340 ml can ginger beer

6 popsicle sticks
6 double shot glasses or a lolly mould

To Serve

1 C (250 ml) vodka
8 fresh limes
handful of fresh mint leaves


Instructions

Ice Lollies

Pour ginger beer into 6 shot glasses, alternatively use a cake pop mould, or ice lolly mould. Place into the freezer for 45 mins or so and then insert wooden sticks and leave to freeze overnight. 

To Serve

When frozen and ready to serve, pour 2 shots (roughly 40 ml) of vodka into each glass (or mule mug), add the juice of one lime and then add slices of extra lime for garnish. Add a few springs of mint and then pop the lollies in and enjoy. 


Notes

Freezing lollies in shot glasses is really easy, don’t overfill as the carbonated soda will expand up and out of the glass. Lollies frozen in glass shot glasses should slide out very easily if left out the freezer for a minute or two.
