Cooking Up a Grande Mexican Fiesta Feast with Old El Paso

Words: Crush

Ooh, there’s nothing we love more than a Mexican fiesta! This bright, fresh style of cuisine is packed with punchy flavour and just begs to be served alongside jugs of festive margaritas. We use the Old El Paso range of Mexican products to create four dishes that are perfect for your next party, as well as for a fun family meal.

A Mexican Fiesta Feast with Old El Paso

Skirt Steak Crunchy Mexican Tacos

Mexican Fiesta FeastWho wouldn’t love lots of fresh deliciousness stuffed into a giant crispy chip? Tacos are quintessentially Mexican and these ones are packed with grande flavour.

We’ve taken skirt steak seasoned with Old El Paso Mild Spice Mix for Beef Tacos and braaied it to perfection. The rested steak is then sliced and stuffed inside these Old El Paso Crunchy Taco Shells that are chock-full of dressed salad and bites of juicy citrus fruit for zing.

Garnish with heaps of fresh coriander and serve with Old El Paso Thick ‘n Chunky Mild Salsa on the side.

Mexican Tuna Ceviche with Guacamole, Salsa and Nachos

Mexican Fiesta FeastCeviche has got to be one of the best ways to eat fish. We’ve used meaty tuna for this dish and cured it with a mix of fresh lime juice, chopped chillies, red onion and chives.

Served alongside is a pile of nacho chips from the Old El Paso Mild Nacho Kit to scoop up all that goodness. And what would nachos be without a generous pile of guacamole? We’ve used Old El Paso Spice Mix for Guacamole, which gives your avo smash all the necessary Mexican flavours… and all you have to do is mix it in!

This is a great way to kick off a dinner party with friends – pop down in the centre of your table and let everyone tuck in.

Elotes – Mexican-style Grilled Corn

Mexican Fiesta FeastElotes are one of Mexico’s most famous forms of street food and we can totally see why. Whole sweetcorn cobs are grilled over hot coals until nicely charred and then slathered in a mix of sour cream and mayo – forget plain old butter, this is the way you want to eat them!

We’ve seasoned the creamy mayo mix with Old El Paso Roasted Tomato & Pepper Fajitas Spice Mix for added flavour and topped with a generous grating of Parmesan cheese and a sprinkling of coriander. Once you sink your gnashers into these you’ll be transported straight to the streets of Mexico City.
