Just in time for those long lazy Springtime lunches, Cavalli introduces two premium limited edition wines to their award-winning wine stable. Foal Wines by Cavalli include Foal Chardonnay and Foal Verdelho. With just one single French Oak barrel of each produced, these wines are available exclusively at Cavalli cellar door at R300.

These wines form part of the premium Cavalli wine range of which three Cavalli wines were awarded 91/100 points by Tim Atkin just this week; the 2016 Vendetta, 2015 Cremello and the 2015 Colt.

Foal Wines by Cavalli – Chardonnay

Barrel fermented, the feminine Foal Chardonnay is made from carefully selected grapes from the Estate. Essences of apricot and honey-roasted almonds prevail with a subtle cream flavour.

In the Foal Verdelho, complexity and richness are imparted by barrel fermentation in old French oak; it’s aromatic and floral with subtleties of honey and fig. Bold but well-structured acidity lends to a fruit driven wine with good ageing potential for up to 10 years after vintage. Each of these wines has been aged on the lees for 18 months in a single French oak barrel, bottled unfined and unfiltered.

The Foal wines embody Cavalli’s Wine & Vineyard philosophy – to produce world-class wines with a very local character and a strong identity so to be clearly recognized as from the Helderberg region while endeavouring to be the benchmark with regards to terroir and quality for the Helderberg in the years to come.

The winemaking team strives, with each new wine, for the immediate environment to be represented in the characteristics of Cavalli wines while upholding sustainable farming practices to preserve the land which falls within the Cape Floral Kingdom, a Unesco World Heritage site.

As the Helderberg region of Stellenbosch is nearest the ocean, it lends the estate to the cooling influence of the Southerly winds. Cavalli soils contain large amounts of ”koffieklip” with a higher percentage of clay in the subsoil, affording the wines an innate elegance and expressive fruit characteristic.

100% Vititech motherblock plant material is used on the farm – resulting in virus-free vineyards and optimal growth, producing outstanding wines. Extreme attention to detail is given from soil preparation to bottling, through a hands-on approach with grapes of the highest quality.
