Delicious deluxe potato skins!
Ingredients
4 potatoes
olive oil
freshly milled salt and pepper
1 C (250 ml) sour cream or low-fat cream cheese
4 spring onions, finely sliced
1/2 C (125 ml) frozen peas
1/2 C (125 ml) grated pecorino
200 g hot, smoked salmon, broken into 8 pieces
2 handfuls of watercress
Instructions
Preheat the oven to 200 °C.
Prick holes in the potatoes and rub with olive oil, salt and pepper. Place onto a baking tray and bake for 1 hour.
Once the potatoes have cooled slightly, cut in half lengthways and scoop out most of the soft potato flesh without breaking the skins. Combine the potato flesh, sour cream, spring onions and peas. Season well. Spoon generous amounts back into the skins and sprinkle with pecorino. Place back in the oven for 15 minutes or until the topping is nice and crispy.
Garnish with hot salmon (the salmon can be made in advance, just reheat it in the oven) and watercress, finishing with the salmon.
Variations
Replace the salmon with crispy bacon bits, and add rocket and cheddar instead of pecorino and watercress.
Substitute the salmon with chorizo and add baby tomatoes.
