Citrusy Summer Salad with Gin Dressing

Description

Summer on a platter – citrus adds so much juicy flavour to this salad and the gin dressing is the perfect balance of sweet and bitter.


Ingredients

Dressing

¼ C (60 ml) olive oil
2 Tbsp (30 ml) lemon juice
2 Tbsp (30 ml) 100% orange juice
2 Tbsp (30 ml) Inverroche Coco L ‘Orange Gin
1 tsp (5 ml) Dijon mustard
1 tsp (5 ml) honey
sea salt and freshly ground pepper

Salad

300 g mixed salad leaves, washed
½ cucumber, peeled into ribbons
2 spring onions, chopped (green part only)
1 large grapefruit, peeled and sliced
1 large orange, peeled and sliced
1 kiwi fruit, peeled and sliced
1 avocado, peeled and sliced
100 g walnuts, toasted and lightly crushed
100 g blue cheese, crumbled


Instructions

Mix all the ingredients for the dressing in a bowl and whisk well to combine. Cover and place into the fridge to chill.

To assemble the salad, use a platter and spread out the mixed leaves and then layer in the cucumber ribbons and spring onions followed by the fruit and avocado slices. Lightly dress the salad with the gin dressing and then sprinkle on the walnuts and cheese. Season with salt and pepper and then serve with extra dressing on the side.
