Avo toast reigns supreme, and for good reason…

Avo toast first made it onto renowned Australian chef Bill Granger’s menu in the 1990s, and the popularity of this culinary phenomenon refuses to die down, as South African foodies, millennials and avo lovers across the globe continue to reinvent the cult classic.

A quick scroll through the social feeds of home cooks, chefs and food influencers reveals that avo, whether sliced, diced or smashed, is still championed in breakfast, lunch and brinner recipes. Avo toast reigns supreme, and for good reason – it can simply be enjoyed as is or dressed up into something a little bit more fabulous, with a few additions. 


Add an Avo

You can never go wrong with green-skinned or dark-skinned avocados – they are equally delicious and nutritious. If you want to know how to pick the right one, just remember: green-skinned avos stay green when ripe, while dark-skinned avos turn purple-black when ripe. 

With avocados available almost year-round in South Africa, there’s no excuse not to indulge in these gorgeous green fruits. The easiest way to make a meal more nutritious? Add an avo, and enjoy the creamy goodness!

Avo Mayo, Feta and Fresh Veg Toast

Health gains have never been easier with this simple yet sumptuous snack. Enjoy it as a breakfast bite, midday boost or anytime meal. It’s so wholesome!

Avo toast recipe, South African Avocado Growers' Association.Makes: 6 slices | Prep time: 20 minutes 

For the Avo Mayo

1 avocado, pitted and scooped from the skin
1 Tbsp (15 ml) white wine vinegar
½ tsp (2,5 ml) garlic powder
2 Tbsp (30 ml) avocado/olive oil + an extra splash
Salt and pepper, to taste

For the Toast

6 slices seed bread, toasted
A handful of fresh mint leaves, finely chopped
2 C (500 ml) *fresh veggies, trimmed
1-2 avocados, cut to your liking
¼ C (60 ml) feta, crumbled
A handful of micro greens or extra mint

To Make the Avo Toast

For the avo mayo, blitz together all the ingredients until smooth. Season with salt and pepper. Taste and adjust the seasoning, if need be.

Spread a layer of avo mayo on the toast. In a bowl, mix the mint and a splash of extra oil through the veggies. Season with salt and pepper. 

Arrange the veggies on the toast with the avocado and season with salt and pepper. Sprinkle the feta and leaves. (*Incorporate your favourite seasonal veggies, like sugar snap peas, cucumber, radishes, cooked corn kernels, chillies and red onion.)

Serve immediately and enjoy!
