Description
The most delicious parcels of pastry with nothing but goodness inside!
Ingredients
2 chicken breasts, halved lengthways
salt and pepper for seasoning
2 tsp (10 ml) + 2 Tbsp (30 ml) olive oil
1 bunch spring onions, thinly sliced
2 carrots, grated or julienned
1/2 cucumber, julienned
a handful of bean sprouts
2 tsp (10 ml) grated ginger
2 cloves garlic, crushed
1 chilli, seeded and finely chopped
2 Tbsp (30 ml) honey
1 Tbsp (15 ml) soy sauce
a handful of fresh coriander, chopped
phyllo pastry
sesame seeds
Instructions
Preheat the oven to 180 °C.
Season the chicken breasts and brown for a minute on each side in the 2 tsp (10 ml) olive oil. Keep to one side.
In the same pan, add the 2 Tbsp (30 ml) olive oil and sauté the vegetables until slightly soft – the vegetables must still be crispy so be careful not to overcook. Add the rest of the ingredients, except the phyllo and sesame seeds.
Grease two sheets of phyllo pastry and place on top of each other. Place a piece of chicken breast and some sautéed veggies in the centre and wrap up in neat parcels. Repeat until you’ve used up all the ingredients. Place the parcels (folded side down) onto a greased baking tray. Brush with olive oil and sprinkle with sesame seeds. Bake for about 14 minutes and serve immediately with some sweet chilli sauce.
