A family favourite that everyone will enjoy.
Ingredients
The “Sponge”
200ml warm water
20g dry yeast
30g (2 tbsp) caster sugar
100g bread flour
Remaining ingredients
50ml warm water
100g caster sugar
400g bread flour
100g butter, room temperature
4 large eggs
Instructions
Combine all the ingredients for the ‘sponge’ in a medium bowl and mix well.
Allow to stand for 30 mins until the mixture has risen slightly.
Stir down the ‘sponge’ and add the remaining ingredients. Mix well until the dough is sticky.
Turn onto a flour surface and knead for 5 minutes.
Transfer to a greased bowl and leave for 1 hour to rise.
Pre-heat the oven to 180°c and grease a loaf tin.
Transfer the dough to the loaf tin and place in the oven.
Bake for 40-45 minutes until the bread is golden brown and sounds hollow when tapped.
Remove from the oven and allow to cool before serving.
