Not Your Regular Burger: Gourmet Burgers with Cape Herb & Spice
We have yet to meet a person who could pass up a good ol’ burger. They’re one of the greatest creations since, well, sliced bread. Let’s face it, they’re addictive, and all it takes to get hooked is a juicy chunk of meat hugged by a bun. While most would consider the meat and bun the primary ingredients, we beg to differ – what makes a quality burger is actually the seasoning. We’ve challenged the concept of ‘traditional burgers’ and used Cape Herb & Spice blends to create two gourmet burgers unmatched in flavour and unrivalled in taste.
Seared Tuna Burger with Avo Edamame and Wasabi Mayo
Burgers are usually associated with the likes of American fast food, but because this isn’t your regular burger, we’ve decided to give this one a healthy fusion-inspired spin, with the Cape Herb & Spice Poké Spice.
Poké is a dish native to Hawaii and made up of diced raw fish, typically ahi (yellowfin tuna), with fresh ingredients that add texture and crunch. While tuna might not be your go-to ingredient to sandwich between a burger bun, we’re here to tell you that it makes for a killer burger. We’ve used the brand new Cape Herb & Spice Poké Spice blend to add umami flavour to the tuna. The addition of black sesame seeds in the spice adds a subtle nutty flavour; roasted onion flakes, chilli, sea salt and the zesty lime and ginger notes transform the tuna into the ultimate flavour bomb.
We’ve generously dusted the tuna steaks with Cape Herb & Spice Poké Spice. Because we want to retain the freshness of the tuna steaks, they require no more than a light sear. A splash of oil and a medium to high heat is all that’s needed to create an even, seared crust.

This recipe manages to beautifully combine two cuisines, as the Hawaiian poké flavours are pleasantly reminiscent of Japanese sushi. We’ve paired the seared tuna with a chunky avo-edamame smash and wasabi mayo for a satisfying fusion flavour profile. For maximum freshness crunch, we’ve finished it off with cucumber ribbons and pickled ginger slices.

Chinese 5-Spice Beef Burger with Roasted Garlic-Miso Mayo
Have a hankering for Chinese but also in the mood for a beefy burger? Well, with this recipe you get to have the best of both! Cape Herb & Spice Chinese 5-Spice beautifully infuses notes of fennel seeds, aniseed, black peppercorns, star anise and cardamom pods. It’s the ideal blend for a gourmet burger. But, what truly beefs up this dish is the hint of clove in the spice, transforming the flavour and making it the perfect bite.
The best part of eating a burger is undoubtedly sinking your teeth into the mouth-watering beef. To make sure your burger is super succulent, ask your butcher for a good meat to fat ratio, we’d recommend a 80 to 20 for the ultimate juicy bite. For best results you’ll want to shape your beef patties beforehand and allow them to rest in the fridge. Give them a good drizzle of oil, season them with Cape Herb & Spice Chinese 5-Spice and grill those babies. Most opt for medium-rare, but since we’re not making traditional patties — your burger, your rules! Have it as rare or well done as you like.

Because we have a healthy obsession with garlic, we’ve made this burger extra garlicky with a garlic-miso mayo. The Chinese spice flavours marry beautifully with the salty-sweet umami-ness of the Japanese miso.
And because cabbage is a prized vegetable in Asian cuisine, it would stand to reason to pair our beef patty with a modern take on coleslaw. You could slice up your own red and green cabbage and throw in a couple of julienned carrots or simply get a pre-sliced rainbow slaw mix. Combine your vibrant slaw with your miso mayo, and give it a good squeeze of lemon juice to wake up the flavours. Before serving, toast those buns till they’re golden brown and assemble! Slather a generous amount of that garlicky miso mayo goodness, add your beef patty and top it with as little or as much coleslaw as you want. Half the appeal of food is the visual, so dress your bun with a couple of fresh coriander sprigs. All that’s left for you to do is devour them.
