Description

The perfect make-it-yourself mayo recipe!


Ingredients

1 egg
1 Tbsp (15 ml) sugar
2 Tbsp (30 ml) vinegar
1 tsp (5 ml) mustard powder
½ tsp (2.5 ml) salt
generous sprinkling of ground, white pepper
1 C (250 ml) sunflower oil


Instructions

Blend the egg, sugar, vinegar, mustard powder, salt and pepper briskly with a stick blender. (You can do this in a blender if you prefer to).

Add the oil in a slow, steady stream with the blender running all the time. Continue adding oil until the mayonnaise is as thick as you would like it to be – sometimes you need to add a little more than one cup.

If the mixtures curdles, turn it out, put another egg into the bowl of the blender, blend briefly and then run the curdled mixture back in to the bowl slowly, blending all the time.

Once you have made your own mayo a few times, you will be able to experiment with adding lemon zest, substituting some of the vinegar with fresh lemon juice, adding paprika and cayenne pepper to taste.
