Jazzy Peanut Butter Muffins

Jazz Apple Muffin Recipe

Makes: 12 muffins
Difficulty: easy
Prep time: 15 minutes
Cook time: 15-20 minutes

1 JAZZ™ apple, diced and peeled
2 tsp (10 ml) ground cinnamon
½ tsp (5ml) salt
⅔ C (160 ml) quick-cooking oats (not instant)
2 C (500 ml) all-purpose flour
½ C (125 ml) brown sugar
2 tsp (10 ml) baking powder
2 large eggs
½ C (125 ml) unsalted butter, melted
½ C (125 ml) milk
2 tsp (10 ml) vanilla
⅔ C (160 ml) peanut butter

Preheat the oven to 200 ºC.

In a bowl, peel and dice JAZZ™ apple and toss with cinnamon, salt and oats. In a separate bowl, whisk together flour, brown sugar and baking powder. In a third bowl, whisk together eggs, vanilla, butter and milk. Stir egg mixture into flour mixture until combined. Stir in oat mixture and peanut butter.

Divide batter among cups in muffin tin and bake on middle oven rack for 15 to 20 minutes, or until a toothpick comes out clean. Transfer muffins to a rack and allow to cool.

JAZZ™, Cherry and Endive Salad

Jazz Apple Salad

Serves: 2-4
Difficulty: easy
Prep time: 15 minutes

 2 JAZZ™ apples
1 C (250 ml) fresh or dried cherries, pitted
1 endive
1 C (250 ml) washed and shredded frisée (curly endive or chicory)
1 C (250 ml) washed and shredded radicchio
1 C (250 ml) finely sliced romaine lettuce
¼ C (60 ml) crumbled blue cheese
¼ C (60 ml) coarsely chopped pecans
¼ C (60 ml) apple cider vinegar
2 Tbsp (30 ml) Dijon mustard
¼ C (60 ml) olive oil
¼ C (60 ml) honey
salt and freshly ground black pepper, to taste

Wash, core and slice apples. Mix together the cherries, endive, frisée, radicchio, romaine, blue cheese and pecans. Put the vinegar, mustard, oil and honey into a small bowl and whisk until all of the ingredients are blended. Add salt and pepper to taste, dress the salad and serve.

Note: This salad is great all year round. When fresh cherries are available, use them. Otherwise, used dried cherries.

JAZZ™ Apple Smoothie Bowl

Smoothie Bowl Jazz Apple

Serves: 4
Difficulty: easy
Prep time: 10 minutes

JAZZ™ apples, cored and diced
1 sliced banana, frozen
1/2 avocado
1 cup chopped kale
1/2 cup frozen spinach
1 cup almond milk
2 tablespoon honey
1/2 cup ice cubes

Toppings:
1/2 JAZZ™ apples, cored and thinly sliced
1 kiwifruit, thinly sliced
1 tablespoon toasted shredded coconut
2 teaspoon chia seeds

In a blender, blend apples, banana, avocado, kale, spinach, almond milk, honey and ice cubes until smooth. Divide among 4 bowls.

Top each serving with sliced apple, sliced kiwi, shredded coconut and chia seeds.
