Berry Glazed Gammon with Bacon Brussels Sprouts

We’re always super excited when the end of the year rolls around, yes it means holiday time but it also means gammon time! Christmas wouldn’t be complete without a gammon centrepiece and this year we have two. Start off with this version that embraces the flavour and sweetness of summer berries. Cooked to perfection and then finished off with this delicious mixed berry jam glaze.

On the side, we’ve gone for traditional Brussels sprouts. But have no fear, these are not the boiled sprouts of old; these have been cooked in rendered bacon fat and the result is a side of crispy and seriously tasty veggies that even the fussiest of eaters will love.

Deboned and Stuffed Rolled Pork Loin Roast with Roast Potatoes

If this rolled pork loin roast doesn’t have you salivating, we don’t know what will! This succulent roast has been deboned and stuffed with a sage and almond filling. Overnight air-drying and salting results in literally the most perfect crunchy crackling you’ll ever make – and there’s plenty of it to go around.

Alongside this roast (because who doesn’t need more golden crunch in their lives) are crispy oven-roasted potatoes. The trick with these is to make plenty because they’ll be just as popular as that roast.

Apricot, Ginger, Garlic and Chilli Glazed Gammon with Apple and Fennel Slaw

To change things up a bit, we’ve gone with a contemporary twist on this second gammon. We’ve sliced the fat in a classic diamond shape and glazed with a mix of sweetness from apricot jam and then added ginger, garlic and chilli for a bit of punch.

Because summer days in Africa can be hot, we’ve opted for a lighter side for this dish, a fresh and just lightly dressed slaw with the addition of fennel and crunch from Granny Smith apples. Quite delicious!

Chilli, Honey and Lime Pork Loin Chops with a Lime and Parmesan Herb Salad

If you’re looking for a more fuss-free option for your festive meal (or perhaps for any meal throughout the holidays), then look no further than a pile of delicious braaied pork chops. We’ve marinated these in a mix of chilli, honey and fresh lime, and cooked over open flames for caramelisation and flavour.

Pile these on a serving platter, dress with a squeeze of lime and extra chilli and serve with a simple green salad with Parmesan shavings and fresh peas. This meal has summer written all over it.
