Braaied Bacon Wrapped Pork Fillet

Description

Pork fillet wrapped in bacon and cooked over the braai fire – yum!


Ingredients

1 kg pork fillet
1 Tbsp (15 ml) olive oil
2 Tbsp (30 ml) Dijon mustard
Maldon salt flakes & freshly ground black pepper
2 packets (500 g) streaky bacon
olive oil, for basting


Instructions

Massage the pork fillet with the olive oil. Spread with the mustard and season to taste.

Wrap the fillet completely with the bacon – secure with toothpicks if necessary. Brush with a little olive oil.

Brown over hot coals, (about 10 minutes) turning very carefully so that the bacon doesn’t unwrap. Raise the grid and continue to braai for about 15 minutes ­– the bacon should be brown and the fillet cooked but not dry.

Allow to rest in a warm place for 5 minutes before carving into thickish slices.
