Description

The best beef and broccoli stroganoff in town!


Ingredients

350 g rump steak, fat removed and cut into thin strips
1 Tbsp (15 ml) cake flour
2 Tbsp (30 ml) butter
1 Tbsp (15 ml) olive oil
1 small onion, sliced
125 g brown mushrooms, sliced
3 Tbsp (45 ml) brandy
1 C (250 ml) sour cream
125 g broccoli florets or long stems
2 fat cloves garlic, crushed
1 ml ground paprika
salt and pepper


Instructions

Toss the steak strips in the cake flour.

Heat the butter and oil in a medium saucepan and brown the beef strips (do not cook through). Keep to one side. Add a bit more oil if necessary and sauté the onion until translucent. Add the mushrooms and fry until nicely browned. Add the brandy and continue frying until reduced. Now add the sour cream, beef, broccoli and garlic. Simmer, covered, for a further 10 minutes. Season with paprika, salt and pepper.

Serve with tagliatelle or fluffy white rice.
