Description

Make in minutes Mexican Nacho-Licious Bake is perfect for supper for two or a party crowd


Ingredients

Chilli con carne
2 Tbsp (30 ml) olive oil
500 g lean mince
1 onion, chopped
23 fresh chillies, chopped
3 cloves garlic, crushed
1 tsp (5 ml) each ground cumin, nutmeg and cinnamon
1/2 t (2.5 ml) smoked paprika
1 green pepper, seeded and chopped
1 x 400 g can tomato purée
4 tomatoes, seeded and chopped
± ½ cup (125 ml) water
1 x 400 g can red kidney beans, rinsed and drained
handful of fresh coriander
milled salt and black pepper
large bag of good quality nachos
Topping
1 cup (250 ml) sour cream or smooth cottage cheese
50 g Parmesan cheese, grated
2 eggs
1 cup (250 ml) grated Cheddar cheese
fresh coriander
 


Instructions

In a large pot, heat the oil and brown the mince, then remove and set aside.

Add the onion, chillies, garlic and spices to the pot and sauté until the onion is soft and translucent. Add the green pepper and fry for a further minute. Stir in the tomato purée, chopped tomatoes and water, cover and bring to a simmer. Cook gently for about 30 minutes, adding more water if necessary.

Lastly, add the beans and coriander, allow to heat through and season well.

To assemble

Preheat the oven to 200 °C.

Layer the nachos and chilli con carne in a deep ovenproof dish, ending off with a layer of chilli mince.
