We’ve used LANCEWOOD® Double Cream Vanilla Yoghurt to lighten this panna cotta and take it from decadent dessert to bougie brunch. The vanilla yoghurt adds a deliciously creamy touch and we simply love the vanilla seeds throughout. We’ve topped the panna cotta with nutty granola for an irresistible crunch, and added some gooseberries, blueberries, strawberries and raspberries for a refreshing pop to burst through the creaminess.
Add any seasonal fruit you can get your hands on, from stone fruit like peaches or plums, to tropical fruit like pineapple or banana. Have fun with it and use whatever you have that’s fresh, bright and seasonal. Hummingbird Sheet Cake with Orange Infused Cream Cheese Icing
Fun fact, Hummingbird Cake is the poster child for Jamaican baked goods. No really, it literally is. The recipe for this island original was part of a press pack sent to the USA from Jamaica in the 1970s in an effort to attract tourists to the island. Since its publication in the States, it’s become a much-loved classic. It is also sometimes referred to as Doctor Bird cake, as it is actually named after Jamaica’s national bird. Whatever you want to call it, the combination of cinnamon, tropical banana and pineapple, with extra crunch from the candied pecan nuts will make your palate sing like a hummingbird.
We’ve opted for a sheet cake, which is ideal for all bakers. Layering cakes can be tricky if you’re not an experienced baker.
