Description

Colourful and delicious chicken noodle salad with a nice crunch.


Ingredients

1 x 75 g packet 2-minute noodles
¼ C (60 ml) sesame seeds
1 small pineapple, peeled and julienned
6 large carrots, peeled and julienned
1 bunch spring onions, thinly sliced on the diagonal
100 g mange tout, thinly sliced on the diagonal
100 g baby corn, thickly sliced
1 Tbsp (15 ml) honey
3 Tbsp (45 ml) soy sauce
1 fresh chilli, chopped  (optional)
2 C (500 ml) shredded cooked chicken


Instructions

Break up the noodles into small pieces and toast in a dry pan until slightly browned. Remove and set aside. Now, lightly toast the sesame seeds the same way. Keep a watchful eye as both can burn easily.

Prepare all the vegetables.

For the dressing, combine the honey and soy sauce and add the chopped chilli, if using.

When ready to serve*, combine the chicken, vegetables, noodles, seeds and dressing and serve immediately.

* Don’t add the noodles and dressing in advance, as the noodles will become soft.
