The most delicious salmon recipe you’ll ever get your hands on!


Ingredients

Dressing
1 Tbsp chopped lemongrass
1 Tbsp grated fresh ginger
1 tsp lemon zest
2 Tbsp lemon juice
1 Tbsp rice wine vinegar or apple cider vinegar
1 Tbsp vegetable oil
1 tsp fish sauce
Salmon
2 Tbsp vegetable oil
400g fresh salmon fillets
2C finely sliced white cabbage
1 green pear, sliced
1 bunch spring onions, sliced finely
1 lemon
Salt and black pepper


Instructions

For the dressing, combine all the ingredients in a small bowl or bottle. Mix thoroughly. Make the dressing in advance and allow to stand for an hour to infuse.

Arrange the cabbage and pear on separate plates, drizzle with 1 Tbsp of the lemongrass dressing.

Heat the oil in a pan. Season the salmon with black pepper and fry at high heat for 3-5 minutes on each side. Be careful not to break the fillet when turning. The salmon should still be pink in the centre. Before removing from the pan, season with salt and lemon juice. Remove from the pan and place directly onto the cabbage salad. Drizzle with more dressing and garnish with spring onion.
