Description

Mouth-watering prawns. Delish!


Ingredients

extra virgin olive oil
1 red onion, thinly sliced
NoMU Just Salt
4 cloves garlic, finely slivered
1 large red chilli, sliced
1 tsp (5 ml) NoMU Spanish Rub
12 large prawns, deveined
fresh lemon juice or sherry vinegar
roughly chopped Italian parsley, for serving
freshly baked bread, for serving


Instructions

Heat a few splashes of extra virgin olive oil in a heavy-based pan and fry the onion with a pinch of salt over a medium-high heat until softened and lightly caramelised. Add the garlic, chilli and Spanish Rub and fry for another minute. Add the prawns and fry until lightly browned on the outside and just cooked through. Add a splash of fresh lemon juice to deglaze the pan, season again, add the parsley and serve immediately with freshly baked bread.

Tip

For a more substantial meal, add sliced chorizo and fry with the onion. Just before serving, toss through baby spinach leaves to just wilt.
