Bunless Chicken ‘Burger’ with Roasted Garlic Mayo
Whether you’re cutting carbs or just want a lower calorie lunch, this bunless ‘lettuce burger’ is the way forward. Using lettuce in place of a bun gives you a much fresher and lighter way to enjoy all the things that make a burger delicious, sans the carbs.
Start with a base layer of lettuce – we used butter lettuce as it yields cup-shaped leaves that mimic a bun. We then added all the fixings – fresh tomato, red onion and a delicious roasted garlic mayo. Topping that is a perfectly charred yet still juicy chicken breast and slices of avo. All you need to do to enjoy is add a squeeze of lime and top with another lettuce leaf – cradle it all together and then tuck in!

Lime, Coconut & Mango Ceviche Tostadas
Ceviche is one of our favourite ways to enjoy fresh fish. What we love about this dish in particular, is that you don’t need to use expensive seafood — we used hake fillets, which are not only well-priced but also a lean source of clean protein.
We cured the fish in a zesty mix of lime juice, chilli and ginger. Once cured, we added in coconut milk (the traditional Peruvian way), this is known as Leche de tigre or tiger’s milk. We opted to serve the ceviche tostada-style (on top of a crispy taco) but it is equally delicious on its own or over some chunky avo guacamole.
To add a tropical note we’ve topped with cubed mango — delicious paired with a glass of Allure De-Alcoholised Sparkling.

Chipotle Chicken on Herbed Quinoa Salad with Charred Corn, Feta & Avo
When you want a salad that’s heartier than a bowl of leaves, this should be your go-to. Quinoa is a superfood and is packed with health benefits; this style of salad is perfect as the weather turns cooler and you want something substantial yet still light.
Chipotle chillies are a great way to add a punchy hit of flavour to protein. We love these ‘braaied’ chicken breasts that are basted in a smokey chipotle marinade before being grilled to perfection. They sit atop a bed of quinoa infused with chopped herbs, red onion, charred corn, feta and avocado. You can serve this as one main salad or plate individually in bowls for a group of friends.

Yoghurt Panna Cotta with Toasted Coconut & Granadilla
Feeling guilty about having dessert is so not a vibe. That’s why we love this lighter take on panna cotta, where a portion of the cream is replaced with yoghurt. This gives the dessert a delicious tang and won’t leave you feeling heavy after indulging. We’ve topped with granadilla pulp and toasted coconut but you could get creative and top with your favourite seasonal fruit. Think berries, stone fruit compote or even cubes of fresh melon — the options are endless.
If you don’t have moulds, fear not, this dessert is just as pretty served in a glass — try a champagne coupe or your favourite dessert glass.
