A bowl of Roasted Red Pepper & Tomato Soup is alwa

A bowl of Roasted Red Pepper & Tomato Soup is always good for the soul. Here’s how to make it:

Ingredients:
- 8 red peppers
- 3 red onions
- 4 large tomatoes
- 8 cloves garlic
- 2 chillies, de-seeded and finely chopped
- 3 Tbsp (30 ml) olive oil
- 2 tsp (10 ml) balsamic vinegar
- 1 tsp (5 ml) smoked paprika
- 1 Tbsp (15 ml) sugar
- 4 tsp (20 ml) mixed herbs
- zest of 1 lemon
- 2 x 400 g cans tinned tomatoes
- salt and freshly milled black pepper to taste

Method:
1. Preheat the oven to 200 °C.
2. Chop the peppers, onions and fresh whole tomatoes into similar-sized pieces. Place onto a roasting tray with the garlic cloves, drizzle with olive oil and season with salt and pepper.
3. Place in the oven for 30 minutes to grill and caramelise.
4. Transfer the grilled veggies to a saucepan and add the tinned tomatoes. Add the smoked paprika, sugar, mixed herbs, chilli and lemon zest. Simmer over medium heat for 20-30 minutes.
5. Taste and adjust the seasoning and when you are happy with the flavour, blend the soup to smooth and season to taste.

Tasty garnish ideas:
- If you like the pop of juicy baby tomatoes, drizzle with olive oil and roast in the oven at 200 ºC until blistered. A swirl of fresh cream in each bowl is delicious.
- For crunch, add crumbled crouton chunks.
- For freshness, blanch and peel a whole tomato, remove the seeds and cube the flesh – add this to the top of each bowl along with your favourite microgreens.
- If you like a little extra bite, add some chopped chillies.

Lemon & Rocket Pesto Tartines with Avocado & Aspar

Lemon & Rocket Pesto Tartines with Avocado & Asparagus 🍋🥑 Here’s what you’ll need:

𝐏𝐞𝐬𝐭𝐨
- 70 g rocket
- 3 garlic cloves
- ½ C (125 ml) cashew nuts
- ½ C (125 ml) grated Parmesan cheese
- ¾ C (180 ml) delicate/mild olive oil
- ½ C (125 ml) lemon juice
- zest of 1 lemon
- salt and pepper

𝐓𝐚𝐫𝐭𝐢𝐧𝐞𝐬
- 4 slices of sourdough, toasted
- 1 x 230 g tub of cream cheese
- 1 large avocado, peeled and diced
- 100 g punnet of baby asparagus, steamed
- 20-30 g roasted and salted cashew nuts, roughly chopped
- 1 lemon, quartered for squeezing
- salt and pepper

𝐌𝐞𝐭𝐡𝐨𝐝

Put all the ingredients for the pesto into a blender and blitz well to combine, then season to taste. If the pesto is a little thick, loosen with a dash more oil until the desired consistency is reached.

Spread a layer of cream cheese onto each slice of toast. Add a generous few spoonfuls of pesto and a few spears of asparagus to each. Top with diced avocado, a sprinkling of cashew nuts, a squeeze of LemonGold™ juice and salt and pepper. Serve immediately.

The zesty pesto is also so versatile! Drizzle over toast, mix through pasta or swirl into labneh for delish flavour.
