Description
These chunky white chocolate muffins are topped with a crumbly almond streusel and lashings of homemade coffee caramel sauce.
Ingredients
Almond Streusel
120 g butter
1 C (250 ml) cake flour
½ C (125 ml) brown sugar
100 g flaked almonds
1 tsp (5 ml) cinnamon
White Chocolate Muffins
12 large cupcake wrappers
2 C (500 ml) cake flour
½ C (125 ml) brown sugar
1 Tbsp (15 ml) baking powder
½ tsp (2,5 ml) salt
⅘ C (200 ml) full cream milk
50 ml Nespresso Barista Creations Chiaro coffee capsules, brewed black (2 capsules)
½ C (125 ml) butter, melted
1 tsp (5 ml) vanilla essence
1 large egg
150 g white chocolate
Coffee Caramel Drizzle
1 C (250 ml) brown sugar
60 g butter
½ C (125 ml) fresh cream
50 ml Nespresso Barista Creations Chiaro coffee pods, brewed black (2 pods)
1 tsp vanilla essence
Instructions
Almond Streusel
Add the butter for the streusel to a medium-sized saucepan over medium heat and melt.
Add the rest of the ingredients and use a fork to whisk until you have a crumbly mixture. Remove the pot from the heat and set aside until needed.
White Chocolate Muffins
Preheat the oven to 180 ºC.
In a large mixing bowl add the cake flour, brown sugar, baking powder and salt and mix well to combine.
In another bowl add the milk and brewed coffee and stir well to combine. Pour in the melted butter and mix, then add in the vanilla and egg and mix well to combine.
Add the wet ingredients to the dry then add the white chocolate chunks. Mix to combine until there is no dry flour but do not over mix. Spoon the muffin batter into a cupcake holder lined muffin tray until they are ¾ full.
Place a generous amount of streusel onto the top of each muffin then bake in the oven for 20 minutes.
Coffee Caramel Drizzle
In a medium-sized saucepan over medium-high heat add all of the ingredients for the coffee caramel. Stir to combine as the mixture melts and comes together.
Bring to a boil then simmer while stirring occasionally until the mixture has thickened – roughly 10 minutes. Remember it will thicken further as it cools.
Allow the muffins to cool and then drizzle with warm coffee caramel sauce and serve with a Nespresso Barista Creations Chiaro mild cappuccino.
