Description

Tahini is a popular mezze dish in Greek, Turkish, North African and Middle Eastern cuisines. This flavoursome spread is made from hulled sesame seeds and adds great creamy texture and richness to any dish.


Ingredients

Tahini
2 garlic cloves
salt
½ C (125 ml) tahini paste
¼½ C (60125 ml) water
¼½ C (60125 ml) lemon juice
2 Tbsp (30 ml) parsley, chopped
toasted sesame seeds to garnish


Instructions

Crush the garlic cloves with salt until smooth.

Combine the tahini paste with the garlic paste gradually, working and mixing to incorporate the two.

Add a little water, alternating with lemon juice. The sauce will become thicker as the water is added and will thin out with lemon. Continue until the desired thickness is achieved. Add the parsley and mix to combine.    

Transfer to a serving dish, drizzle with lemon juice and sprinkle with toasted sesame seeds.
