Description

Roasted bone marrow is hidden treasure when it come to food.


Ingredients

12 marrow bones, cleaned
salt and freshly milled black pepper
½ C (125 ml) fresh breadcrumbs
10 g fresh parsley, finely chopped
1 clove garlic, crushed
zest and juice of 1 lemon
2 Tbsp (30 ml) olive oil
1 ciabatta, thinly sliced and toasted


Instructions

Preheat the oven to 180 °C.

Place the marrow bones onto a baking tray and season with a little salt and pepper.

Pour the breadcrumbs into a bowl and add the parsley, garlic, lemon juice and zest. Season with salt and pepper and add the olive oil. Mix until well combined.

Place a tablespoon of breadcrumb topping on each marrowbone and roast in the oven for about 30–45 minutes or until the bone marrow is cooked through and the topping is golden.

Serve immediately with the toasted ciabatta slices.
