Ingredients

40 g butter
2 medium onions, peeled and diced
2 T (30 ml) flour
500 g frozen peas
1.5 litres chicken stock
salt and freshly ground black and white pepper, to taste
a couple of sprigs of fresh mint, finely chopped


Instructions

Melt the butter in a large saucepan over medium heat. Soften the onion in the melted butter but do not allow to brown.

Stir in the flour and allow to cook for a couple of minutes. Add the chicken stock gradually, stirring after each addition.

Add the peas and simmer for 20-30 minutes.

Liquidise and season to taste with salt and the peppers. Add the mint to taste.

Suggestions for plating

Pea soup with fresh mint – drizzle with fresh cream and garnish with micro greens
