Fresh Lemonade and Mint Popsicles

Fresh and minty and oh-so-yum!


Ingredients

2 C (500 ml) freshly squeezed lemon juice
¾ C (160 g) castor sugar
1 lime
unpeeled and thinly sliced 8 fresh mint leaves


Instructions

To make the lemonade syrup, place the lemon juice and sugar in a saucepan and heat until the sugar has just dissolved. Do not allow to boil – it will taste like marmalade. Allow the mixture to cool completely. Add water to taste.

Pour the mixture into little cardboard cupcake holders (available from baking shops – check that they can hold liquid), add a mint leaf and one slice of lime. Carefully push the wooden stick through the slice of lime to hold it in place.

Place the cupcake holders onto a baking tray then place in the freezer to set overnight. Unmould and serve immediately
