Delicious Lamb Tray Bake

Description

A simple way to cook the most delicious lamb all-in-one dish!


Ingredients

8 lamb loin chops/cutlets
4 cloves garlic, crushed
1 sprig rosemary, chopped
juice and zest of 1 lemon
2 Tbsp (30 ml) olive oil
1 red onion, thinly sliced
1 red pepper, cut into cubes
1/2 packet (250 g) cubed butternut (about 2 x 2 cm)
6 courgettes (baby marrows), sliced thickly on the diagonal
1 C (250 ml) couscous
1 C (250 ml) cold, prepared chicken stock
salt and pepper to taste
flat leaf parsley, roughly chopped


Instructions

Preheat the oven to 220 °C.

Put the lamb cutlets in a bowl and add the garlic, rosemary, lemon juice, zest and olive oil, massaging it into the meat. (first mix the garlic, rosemary etc together??)

Place all the veggies onto a baking tray, drizzle with a little olive oil and season. Roast for 15 minutes. Arrange the lamb chops between the veggies and roast for a further 30 minutes.

Meanwhile, prepare the couscous by adding the stock and allowing it to stand for 10 minutes. Fluff and break up with a fork. Add the couscous to the tray and combine with the veggies and chops. Check the seasoning, add some parsley and serve.
