Three titans of flavour come together to create the ultimate sweet-savoury bacon flavour bomb.
Ingredients
2 packets of streaky bacon
2 Tbsp vida e caffè Vega beans strong espresso, warm
4 Tbsp maple syrup
2 Tbsp brown sugar
10 shakes of Chipotle Tabasco
To Serve
Sunnyside eggs

Instructions
Heat the oven to 200 ºC.
Mix the coffee, syrup, sugar and Tabasco together. Mix to ensure that the sugar dissolves completely.
Line a baking tray with foil or baking paper and arrange the bacon without any overlapping.
Brush the top of the bacon with the glaze and pop it into the oven for 10 minutes.
After 10 minutes, flip the bacon and brush with the coffee maple glaze again. Bake for another 10 minutes and keep an eye on it because once the sugar begins to caramelise it can burn quickly. Aim for a rich caramel colour then remove the bacon from the oven.
Allow to cool and eat it all in one sitting served alongside some toast, sunnyside eggs and a cup of vida e caffè Vega coffee.
