Brussels Sprouts With Nutmeg & Brown Sugar

Description

Brussels sprouts are a festive favourite!


Ingredients

500 g fresh Brussels Sprouts
60 g –80 g butter
1 Tbsp (15 ml)water
40 g brown sugar
½ freshly grated nutmeg (for best results use a micro plane)
salt and freshly crushed black pepper
bowl of iced water
 


Instructions

Cook the Brussels sprouts in salted boiling water until soft, this will take 5 –7 minutes (Tip: cook to your personal taste – if you like them still slightly hard boil for slightly less time)

Remove from the boiling water and refresh in the bowl of ice water to stop the cooking process. Either leave whole or if preferred, cut in half.

In a saucepan add the sugar with the 1 tablespoon of water and butter. Allow the sugar to dissolve, and to slightly caramelise, then add the Brussels sprouts. Toss in sugar butter and add nutmeg and seasoning.
