Description
The flavour of the banana loaf improves if left for a few days.
Ingredients
125 g butter
1 C (250 ml) sugar
1 tsp (5 ml) vanilla essence
2 eggs
2 C (500 ml) cake flour
2 tsp (10 ml) baking powder
1/2 tsp (2.5 ml) salt
4–6 ripe bananas (the riper, the better)
Instructions
Preheat the oven to 180 °C.
Beat the butter and sugar together until light and creamy. Add the vanilla essence, then add the eggs one at a time, beating well after every addition. Sift all the dry ingredients together and add to the butter and sugar mixture, then mash the bananas with a fork and add to the mixture as well. Mix until well combined and pour into a well-greased loaf tin. Bake for 1 hour.
Tips
The flavour improves if left for a few days … store in a tin or airtight container.
Don’t fret when the loaf cracks on top – this is supposed to happen!
