An Asian affair! This salad is simply scrumptious!


Ingredients

Fillet
500 g pork fillet
1 tsp (5 ml) cooking oil
2 Tbsp (30 ml) oyster sauce
2 Tbsp (30 ml) soy sauce
3 Tbsp (45 ml) plum sauce
Salad
4 oranges, peeled and sliced
4 carrots, peeled and julienned
1 red onion, sliced
100 g watercress
handful of mint, roughly chopped
handful of coriander, roughly chopped
juice of 1/2 orange
milled black pepper


Instructions

4–6 wholewheat wraps

Preheat the oven to 200 °C.

 

Fillet

Rub the fillet with oil and brown in a griddle pan. Combine the oyster and soy sauces and baste the meat with it. Pop the fillet into the oven for about 15 minutes. Remove from the oven and allow to rest for a few minutes. Slice the pork thinly and add the plum sauce, coating the meat well.

 

Salad

Toss all the salad ingredients together, except the orange juice and pepper. Add the pork and combine well. Drizzle with orange juice and freshly milled black pepper when ready to serve. Serve with heated wraps.
