Zesty Snoek Mayo with Apple Salad

Snoek mayo

  • 500 g smoked snoek, bones and skin removed
  • ¼ C (60 ml) creamy mayonnaise
  • juice and zest of 1 lemon
  • 2 Tbsp (45 ml) chopped parsley
  • freshly milled salt and pepper to taste



  • 1 ciabatta, sliced
  • olive oil


  • juice of ½ lemon
  • 2 Tbsp (30 ml) extra virgin olive oil


  • 1 cos lettuce, shredded
  • 2 green apples, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 medium cucumber, seeded and cubed

Combine the snoek mayo ingredients and season to taste. Drizzle the ciabatta slices with olive oil and toast on a hot griddle pan placed under a grill, turning once until crispy. Whisk the lemon juice and olive oil together and toss with the salad ingredients.

Serve the snoek mayo and apple salad with the crispy ciabatta toast.
