Wholewheat Linguini with Prawns, Avocado and Lemon and Chive Sour Cream Dressing
The perfect summer pasta, cool and refreshing – one of Carey's favourite dishes!

1 C (250 ml) sour cream
juice and zest of 2 lemons
3 Tbsp (45 ml) extra virgin olive oil
a handful of fresh chives, chopped
salt and milled black pepper to taste
500 g wholewheat linguini, cooked al dente and rinsed with cold water
400 g ready-cooked prawn tails, defrosted in cold water, then drained
2 ripe but firm avocados, peeled, pip removed and cut into bite-size cubes
Mix the dressing ingredients together, reserving a little of the lemon zest for garnishing.
Pour the dressing over the cooked pasta and mix until well combined. Add the prawn tails and cubed avocado and gently mix through.
Serve immediately, sprinkled with salt, plenty of black pepper and the remaining lemon zest.
To ring the changes, replace the prawns with 200 g chopped smoked salmon.
Add julienned strips of cucumber together with the prawns and avocado.
