Roasted Garlic with Basil & Thyme
Roasted garlic makes a flavoursome spread for bread or crackers, it is also versatile enough to use to flavour sauces, dips and more.

Ingredients
6 heads of garlic
olive oil, to drizzle
balsamic vinegar, to drizzle
salt and freshly ground pepper
balsamic vinegar, to drizzle
a few sprigs of thyme
Method
Preheat the oven to 180 °C.
Slice off the top of each head of garlic and place on a baking tray.
Drizzle each head with a little olive oil and balsamic vinegar and season with salt and freshly ground pepper.
Add a few sprigs of thyme to the garlic and place in the oven for approximately 1 hour, or until the garlic cloves are completely soft and tender.
Serve as a warm spread on toasted ciabatta.
Other serving ideas – use the roasted garlic flesh to flavour mashed potatoes, mix into softened butter for garlic bread or add to mayonnaise or cream cheese to make creamy dips/spreads.
