White Chai Hot Chocolate


Delicious white chai hot chocolate is definitely a perfect winter warmer.

  • ¼ C (60 ml) good-quality grated white chocolate (made with cocoa butter not vegetable fat)
  • 2 C (500 ml) full-cream milk
  • 2 C (500 ml) water
  • 1 tsp (5 ml) ground ginger
  • 1 tsp (5 ml) ground cinnamon
  • ½ tsp (2.5 ml) ground cardamom
  • 2 whole cloves
  • 2 black peppercorns

Place the grated white chocolate into a glass bowl and keep to one side. Pour the milk and water into a small saucepan. Whisk in the spices. Place over medium heat and allow to come to the boil slowly, stirring occasionally. As soon as the mixture begins to boil, reduce the heat to low and remove the cloves and peppercorns by straining the milk through a sieve. Whisk the milk to distribute the spices and slowly pour it over the white chocolate in the glass bowl.

When the chocolate has melted, stir and then pour into cups. Serve hot.
