Whipped Feta

Whipped Feta & Cream Cheese with Green Olive Salsa Verde

Say hello to your new fav party dish. This creamy cheese combo is delish smothered on toasted baguette and topped with a zesty green olive salsa.

Whipped Cheese

250 g plain feta
230 g full-fat cream cheese
1 garlic clove, finely chopped/ micro-planed
1-2 Tbsp (15-30 ml) medium style extra virgin olive oil
a squeeze of lemon juice
sea salt and freshly ground pepper

Green Olive Salsa Verde

1 (200 g) packet of pitted green olives, chopped
a handful of flat-leaf parsley, finely chopped
a handful of chives, finely chopped
a handful of fresh oregano, picked and finely chopped
a small handful of capers, chopped
a small handful of fresh thyme leaves, picked and chopped
2 anchovy fillets, very finely chopped
½ C (125 ml) medium style extra virgin olive oil
2 Tbsp (30 ml) red wine vinegar
zest of 1 lemon
sea salt and freshly ground pepper

To Serve

1 rustic baguette, thinly sliced
medium style olive oil for brushing

Whipped Cheese

Add the feta, cream cheese, and garlic to a stand mixer and mix until combined. Scrape down the sides and add the lemon juice and olive oil. Add one tablespoon of olive oil first and check the consistency, if you would like it a little looser, add the second tablespoon.

Mix and then taste and adjust the seasoning. Give a final mix until combined and fluffy.

Green Olive Salsa Verde

In a small mixing bowl, add the olives, parsley, chives, oregano, capers, thyme and anchovies and mix well to combine.

Pour in the olive oil and vinegar and mix well to combine.

Add the zest, season with salt and pepper and give it one last stir.

To Serve

Set the oven to grill; brush the bread slices with olive oil and season with salt and pepper. Grill the bread until golden brown and crispy.

Scoop the whipped cheese into a serving dish or onto a platter. Drizzle with olive oil and serve the green olive salsa and plenty of toasted bread on the side.
