Watermelon Salad


A juicy salad full of seasonal melon flavour – a summers day favourite!

100 ml aged balsamic vinegar

2 kg watermelon cut into 2 x 2 cm pieces

100 g pumpkin seeds, toasted

100 g sunflower seeds, toasted

50 g cashew nuts toasted

50 g macadamia nuts, toasted

50 g sunflower shoots washed

400 g fromage blanc

40 ml olive oil

a pinch of sea salt

In a large salad bowl with a flat base drizzle the aged balsamic vinegar and scatter the cubed watermelon on top of the drizzle.

Scoop small balls of the fromage blanc and randomly place on top of the watermelon.

Lightly crush the nuts and seeds and combine. Sprinkle the mixture over the salad.

Dress the sunflower shoots with the sea salt and olive oil and scatter over the salad. Best served chilled on a hot summers day.

Foodie Fact: Fromage Blanc is a lightly salted, cows milk cheese which can be used in sweet or savoury dishes. It has a consistency similar to a light cream cheese.
