Watermelon Crowd-Pleaser Cocktail
By adding cubes of watermelon into your glass you end up with lovely clear juice and crunchy fruit to bite on.

Ingredients
1 large watermelon
1 ½ C (375 ml) coconut water
juice of 1 or 2 limes or lemons (about 65 ml)
1 C (250 ml) light rum
Method
Cut off the 2 thinning ends of the watermelon so what’s left is a large centre cut. Stand this upright, cut off the four sides so that what results is a square piece of fruit. Refrigerate for use later.
Cut the fruit off the rinds and roughly cube, this should yield about 1.5 kgs. Remove as many pips as possible. Pulse in a blender until juiced. Pour through a sieve to remove all pulp.
In a large jug mix together the watermelon juice, coconut water, lime juice and rum. Stir in a handful of ice blocks and ensure it is well chilled.
Cut cubes of watermelon from the square to serve.
