Watermelon & Coconut Vodka Mojito
This deliciously refreshing slushie is perfect for a summers day.

1½ C (375 ml) fresh ripe watermelon, blended to make juice
2 Tbsp (30 ml) coconut milk or coconut cream
2 Tbsp (30 ml) simple sugar syrup (recipe in method)
1–2 Tbsp (15–30 ml) vodka
fresh mint, for garnish
fresh coconut shavings, for garnish
Place the watermelon juice into a bowl and add the coconut milk and the sugar syrup. Mix well.
Pre-freeze the inner core of the Zoku® Slush and Shake Maker in the freezer. Remember it can also be stored in the freezer so it is ready to use again. Remove the inner core from the freezer and pour in the watermelon and coconut mixture. Scrape down the sides of the Zoku® Slush and Shake Maker every minute or so, as it begins to freeze. The slushie should be ready after 7 minutes.
Stir in the vodka and garnish with mint and fresh coconut shavings. Serve immediately.
Simple sugar syrup – yields 1 C (250 ml)
Place ½ C (125 ml) sugar into a saucepan and add ½ C (125 ml) water. Stir over a low heat until the sugar has dissolved, then bring to a boil and boil for 5 minutes. Remove from the heat and leave to cool completely before bottling.
