
Warming Rooibos Gingerbread ‘Latte’
Try this ginger latte as delicious warm drink to help you beat the cold.

Ingredients
2 C (500 ml) milk (or unsweetened almond milk or milk substitute of your choice)
1 thumb sized piece of ginger, peeled and sliced
seeds of half a vanilla pod or one pump of a vanilla seed paste
¼ C (60 ml) strong rooibos tea*
honey to taste
*For a latte with more of a kick, you can substitute the rooibos tea with the same amount of strong coffee.
Method
Place the milk or milk substitute into a small saucepan and add the cinnamon, sliced ginger and vanilla. Allow to gently heat through over a low-medium heat. Don’t rush it as you want the ginger to have a chance to steep. Add the rooibos tea (or coffee) and then add your preferred amount of honey to taste.
If you have a milk frother, remove a portion of the heated ginger milk – remember to strain through a sieve to remove the whole ginger pieces. Froth a portion of the milk. Pour the rest of the milk from the saucepan into two mugs, top with froth and a sprinkle of ground cinnamon and serve.
Tip: This can be done in a microwave just as easily but it would be recommended that you steep the ginger in the milk a little ahead of time to really get the benefit. Always watch milk and stir regularly when heating in the microwave as the sugars in the milk can cause it to bubble up and boil over very quickly.
