Wacky One – Pot Lamb Curry

  • 500 g trimmed leg of lamb
  • 1 Tbsp (15 ml) good-quality medium curry powder
  • 1 large onion, thinly sliced
  • 2 Tbsp (30 ml) olive oil
  • 2 C (500 ml) chicken or vegetable stock
  • 1 x 425 g tin crushed tomatoes
  • 2 cinnamon sticks
  • 2 small green chillies, chopped
  • 3-cm piece fresh ginger, grated
  • 3 cloves garlic, crushed
  • 6–8 curry leaves
  • ½ tsp (2.5 ml) ground cumin
  • salt and milled black pepper
  • 1½ C (375 ml) pasta rice
  • naan bread, fresh coriander and thick Greek yoghurt for serving

Preheat the oven to 180 °C.

Cut the lamb into 2-cm cubes and place in a medium ovenproof dish. Scatter curry powder and onion on top and drizzle with the oil. Give everything a good stir and bake for 20 minutes.

Remove the lamb from the oven. Add the stock, tomatoes, cinnamon, chillies, ginger, garlic, curry leaves and cumin. Season with salt and pepper. Cover with foil and return to the oven for another 25 minutes.

Remove from the oven and add the pasta rice. Return to the oven, uncovered, for another 20 minutes, by which time most of the liquid will have been absorbed. Give a final stir before serving with naan, fresh coriander and a dollop of yoghurt.
