Ultimate Roast Turkey Leftover Sandwich

2 baguettes, cut into half and then sliced lengthways
2 fresh tomatoes, sliced and seasoned
1 avocado, sliced or mashed and seasoned
⅓ C (80 ml) good quality mayonnaise
120 g pre-made coleslaw
300 g turkey leftovers, shredded, sliced or pulled
¼ C (60 ml) chutney
8 slices gruyere cheese slices or any other cheese of choice
Butter each baguette and lightly toast under a grill or in a heated pan until golden.
To assemble, start by placing four bottom pieces of toasted baguette on a tray, spread mayo on each slice and lay baby gem leaves on top.
Layer with slices of seasoned tomato, followed by avocado and then turkey.
Top the turkey with some dollops of chutney, followed by coleslaw and gruyere cheese.
Place the top of the baguette on top and gently press down and secure with a skewer if need be. Serve immediately.
